Radiator cap increases the boiling point of the coolant under high pressure.
By increasing the pressure in the cooling system the boiling point of the coolant increase  Thanks to this better heat transfer occurs.
From the radiator there is considerable amount of heat transferred to the air and thus it keeps the engine in optimal working conditions even at high load.
